Individual Minni Meatloafs

Okay, I know what you are thinking, ewe meat loaf?  I know that is what my sister is thinking anyway!  Honestly, these are really good.  They are also super simple and easy to make ahead and freeze.  I did a triple batch this week, and froze most of it in disposable baking pans for a later date!

Mini Meat Loafs
1 egg
3/4 c. milk
1 c. shredded cheddar cheese
1/2 c. oats (if you are using a less lean ground beef you may need to increase this to 1 cup)
1/2 c. onion
1 tsp salt
1 lb ground beef

Sauce:
2/3 c. ketchup
1/2 c. brown sugar
11/2 tsp prepared mustard

Combine meat and ingredients and form into 8 mini loaves.  Spoon sauce over the top and bake at 350 for 45 min.

I like mine very saucy so I doubled the sauce recipe and it was great!  I know that just looking at the picture it doesn't look the best, but believe me, these are really good!!  I serve them with mashed or baked or fried potatoes, and the broccoli slaw recipe I posted here.

  3. Ok i admit i am the sister that HATES meat loaf. just thinking about it makes my tummy do cartwheels. But i will have to back my sister up on this one because i have made this and i actually like them. now you won't catch me making them every week or anything but they are good. and she's right about the sauce.

  5. Now I love meatloaf...so I'm going to give these a try. To answer your question about the the wax on my tables..I used the wax all over the table and was very pleased with the results.
