Date Salad Recipe

Happy Wednesday!!  I hope your week is going great!  Today I thought I would step out of my norm and share a recipe with you all.  Now I cannot claim this one as mine, my friend A made this a few weeks ago for about 80 of us.  She said she had it at a restraunt recently and loved it!  I must admit, it is awesome!! 

So, lets assemble our ingredients.  I don't really have quantities, its just how ever much you want.
Green leaf and red romain lettuce, I chopped mine, its just quicker than tearing, but its your choice.
Then you'll want to chop up some cucumber, Zima tomatoes (in season now at your local Kroger and Sam's Club), fresh dates, and my own addition to this salad, green onion.

Toss all that on your bed of lettuce, then add some crumbled feta cheese, and pine nuts. Now, if you don't have pine nuts, cause they are kinda pricey, you can use salted sunflower seeds or even pecans.
Add a bit of Balsamic dressing, toss and enjoy!

Date Salad

Green leaf lettuce
Red Romain lettuce
green onion
Fresh Dates (btw, these have a seed in the middle, and yes they have to be refrigerated after opening)
Cucumber
Zima tomatoes
Feta Cheese
Pine nuts (or salted sunflower seeds)
Balsamic dressing

Ceci's Blasamic Dressing
1/3 cup olive oil
1/3 cup balsamic vinegar
1/3 cup honey
fresh ground sea salt
fresh ground pepper

Mix all well and serve.  This can be used with any type oil and vinegar, if you use a sweet vinegar you may want to use less honey.

Hope you all will try this, I promise it is great!!  I also think a bit of bacon would be great on it too, but then bacon makes everything good right?

  2. Looks great! I have had a package of dates for several months and just haven't known what to do with them. I'll have to try this salad.
