Chocolate Topped Oat Cakes...YUM!

Thought I would share a recipe with you today.  I enjoy baking, however it is not something I do that often anymore.  Little Monkey likes to help, and that always makes it take twice as long, with twice the mess, so sometimes I just avoid it.  (I know, I'm a terrible mom, I do let her help sometimes.)  This recipe came from a friend who has a business making cookies.  They are probably considered more of a British styled cookie, (hence the cake name), but they are still yummy.   These are a great dessert, but my favorite way to eat them?  For breakfast with a big glass of milk!  I know, not healthy at all, but oh soooo good!

Oat Cakes

2 cups sugar
4 cups oats
2 3/4 cups flour
1/2 tsp baking soda
1/2 tsp salt
2 sticks butter or 1 cup shortening (DO NOT use margarine, doesn't work for some reason)
2/3-1 cup water

Mix dry ingredients well.  Cut in butter or shortening till mixture is dry and crumbly.  Add water a little at a time, mixing well until thick and moist, but not sticky wet.  Pat out to about 1/2 inch thick and use a biscuit cutter to cut out cookies.

Bake at 350 for 20 minutes.  Tops will not darken.

Topping:
1 bag semi sweet chocolate chips melted, spread over tops of cooled cakes.  Enjoy!

Oh, as a side note, these freeze well after they are baked, so they made a great back up dessert.  Beware, its tough to stop with just one!

Aren't they pretty?  I really love to make these, also, the ingredients are pretty inexpensive compared to some cookies.  Hope you all enjoy them, I know I am!
