Pinterest Monday # 23

Happy Monday Everyone!  I hope you all had a safe weekend!  We had some fun with that nasty storm that blew through the East Coast, lost our power Friday night around 10 and got it back Saturday around 4 pm.  We spent Saturday with my sister in law, she had a pool and air conditioning!  Thankfully things are getting back to normal round here.

Today I have four recipes from Pinterest.  I have tried them all and we love them! 

First up, my breakfast today, Baked Peanut Butter Oatmeal!  If you don't like oatmeal because of the texture you have got to try this!  It is like eating an oatmeal cookie only its healthy!  This comes from Tidy Mom.  For those on Weight Watchers, one serving is 6 pts +.
In keeping with the breakfast theme, Streusel Topped Blueberry muffins from my favorite cooks, the gals at Our Best Bites!  These are so good and so addictive!  They didn't last long around here!
Now we turn to appetizers that are also great for lunch.  First up, Wonton Tacos (like Applebees Wonton Taco appetizer) from Hungry Girl.  The best part is that you get 4 tacos for onlly 5 WW points plus!  You can then fill the rest of your lunch out with a healthy salad or fruit!
Our next appetizer turned lunch is one I made just last night!  It was a big hit!  Southwestern Egg Rolls (just like the Chili's version only baked!)  These come from Short Stop.   These are 4 points each, you might be able to shave some of the points off by using reduced fat cheese. 
For the dipping sauce, I didn't use the avocado ranch sauce this recipe calls for because I have another favorite, Cilantro Lime Ranch dressing.  That comes from the ladies at Our Best Bites, but I think it is only in their cook book and since that is copyrighted I am not going to share it here.  That cookbook is well worth having!!

  2. MMM, I have had the oatmeal, but Mr didn't care for it, sooooo, it was up to me to finish it off! Needless to say, I enjoyed it very much and so did my hips.

  4. I've made a baked oatmeal but it wasn't peanut butter. The muffins look scrumptious. Wonton Tacos look pretty good but I think I'll skip the Southwest Egg Rolls. ;)
