Peaches! Peaches! Anybody want Peaches?

So, I am sitting here, thinking about what to write while I eat my breakfast, and I am feeling sorta sorry for you all.  Why?  Because my breakfast is a large slice of fresh peach pie that I made last night.  Sorry, I know it's not fair, but if you read farther, I'll share the recipe, then tomorrow you too can have fresh peach pie for breakfast.
Last week we got a bushel of peaches, then we decided we needed more peaches, so we got another bushel and a half.  Here is what I have been doing for the last 10 days or so.

Peach salsa

peach preserves

peach freezer jam

peach butter

frozen peach slices

canned peaches

and last but not least, peach pie!!

Its been a lot of work, but it has been fun and yummy!   I thought that I might share all this peach goodness with you all!  Nope, not gonna share my peaches, you'll have to get your own, but I will share a wonderful recipe for peach salsa that I found on allrecipes.com.  It was fabulous, and had only positive reviews, we loved it!

Zesty Peach Salsa

2 cups fresh or frozen peaches, diced
1/4 cup chopped sweet bell pepper
1/4 finely chopped red onion ( I used a Vidalia onion instead as it was all I had, it was great!)
1 jalapeno seeded and finely chopped (again, I didn't have a jalapeno so I used the peppers I had on hand)
2 table spoons orange or lemon juice
1 tablespoon fresh cilantro (I used dried as that was all I had)
2 teaspoons lime juice
1/4 teaspoon salt
\Mix and serve!  It was great over chicken, and would be amazing over fish!

I will also share the peach pie recipe, I got this from a friend, she brought it to us one year ago this week as a house warming gift the night we moved in!  It was awesome after a long day of work!!


9" baked pie crust

Approximately 6 to 8 peaches, sliced

8oz. package cream cheese
1/3 cup powdered sugar
Soften cream cheese and mix with powdered sugar. Spread in bottom of pie crust. Chill while making the rest of pie.

1/2 cup sugar
1 cup water
3 tblsp. cornstarch
Bring these three items to boil. Remove from heat as soon as thickened and clear.
Stir in 3 oz. package of peach jello. Add one tsp. of lemon juice {optional}. Mix this in with the peaches and spread on top of cream cheese layer.

  2. I want your peaches! They look so good! I guess I'm going to have to come visit if I want any. Mom just froze a bunch of peaches the other day. Might have to go and steal a bag.

  3. The peach salsa is yummy! I had it for lunch today. Lois, if you come visit I will share my peaches with you! I promise!!!! I have 4 gallon bags in my freezer right now, so we can have them this winter hopefully. You could go get some of your own though, I'm sure mom would tell you where she got hers!
